Lentil and Havarti Summer Salad

Instructions

  • Cook the lentils according to package directions and let cool.
  • Dice all the veggies and cheese and add to a large bowl
  • Make the dressing - whisk the olive oil, lemon juice, garlic, salt and pepper.
  • Toss the cooked lentils with the veggies. Drizzle with dressing and sprinkle on mint leaves.
  • Serve room temperature or cold.

Mini English cucumbers, diced
