Ham and Havarti Sandwiches

Name: Ham and Havarti Sandwiches
Ingredients: 1 red onion, thinly sliced; 2 tbsp olive oil; 1 pinch of salt; 1 tbsp dijon mustard; 3 tbsp mayonnaise; ¼ tsp smoked paprika; 1 clove garlic, minced; 2 hot dog rolls; 8 slices deli ham; 2 slices havarti cheese; 1 sliced tomato; 1 rocket

Instructions

To make the caramelized onions

Heat olive oil in a large sautepan set over medium heat. When the oil is hot, add the onions anda pinch of salt. Cook for 4-5 minutes, until onions begin to soften,and then decrease the heat to low. Cook onions for another 30-35minutes, stirring frequently, until they are soft and deeplycaramelized.

To make the dijon aioli

Stir together mustard, mayonnaise,paprika, and garlic.

Smear the aioli on the hoagie rolls and top each sandwich withham, havarti, caramelized onions, sliced tomato, and arugula.
