Ingredients

Onion, thinly sliced

Olive oil
2 tbsp
Garlic cloves, chopped

Broccoli florets, chopped
1 cup
Ham, diced
4 oz
Fresh herbs (like chives and dill)
2 tbsp
Kosher salt, divided
3 tsp
Eggs

Double cream
½ cup
Black pepper
½ tsp
Havarti cheese, diced
6 slices

Instructions

  • Heat oil in a large cast iron pan set over medium heat. When the oil is hot, add the onions and 1/2 tsp kosher salt. Cook for about 5 minutes, until the edges of the onions begin to brown, and then turn the heat down to low. Continue cooking for 20-25 minutes, until onions are soft and caramelized.
  • Increase the heat back to medium and add the garlic cloves and broccoli along with another 1/2 tsp of salt. Cook for 5 minutes, until broccoli is softened and bright green in color. Stir in the ham and the fresh herbs. Remove from heat.
  • Preheat the oven to 350° F.
  • In a large bowl, whisk together the eggs, heavy cream, remaining 2 tsp of salt, and pepper. Add half of the diced cheese to the bowl with the eggs and stir to disperse.
  • Pour the egg mixture into the cast iron over top of the veggies and sprinkle the rest of the cheese on top.
  • Bake for 25-35 minutes, or until the eggs are completely set and the edges are golden brown. Garnish with more fresh herbs and let cool slightly in the pan before slicing and serving.
