Cheesy Shrimp and Grits

Instructions

  • Cook grits according to package directions. When they are cooked through, stir in 3 TBSP of the butter and the cheese until melted and well incorporated.
  • While the grits cook, season the shrimp with the cajun seasoning and salt and pepper. Heat the remaining 1 TBSP of butter and olive oil in a large skillet on medium high. Sear the shrimp for 2 minutes per side, or until cooked through.
  • Remove the shrimp from the pan and add the bacon. Once bacon is crispy, stir in the chicken stock, soy sauce, and worcestershire sauce. Cook over medium until the sauce reduces by half.
  • To plate, spoon the cheesy grits onto plates, top with shrimp and then drizzle the bacon sauce over top. Garnish with chives and chili oil.
