Ingredients

Base

  • ½ cup butter
  • 1½ cup crushed graham crackers

Filling

  • ¾ cup white chocolate
  • ½ cup sugar
  • 4 tubs Arla® Original Cream Cheese Spread
  • 2 cup cottage cheese
  • 2 eggs
  • 1 tablespoon vanilla
  • lemon zest
  • lemon juice

Sauce

  • ½ cup frozen blueberries
  • ¼ cup powdered sugar

Base

Start with the blueberry sauce. Add blueberries to powdered sugar in a pan and bring to a boil. Since and let the sauce cool in the refrigerator. Then, break the graham crackers and mix into fine crumbs. Melt the butter and mix well with crumbled graham cracker. Line the base of a cake tin with parchment paper, then press the biscuit mix in the tin until the base is even and smooth. Bake in the oven for 10 minutes at 375°F.

Filling

To make the filling, chop and melt the white chocolate in a microwave or boil. Add the vanilla, then mix sugar, eggs, cottage cheese, Arla Original Cream Cheese and lemon juice and zest. Keep stirring until the texture is smooth and blend in the melted white chocolate. Lower the oven temperature to 300°F. Pour the filling into the cake tin. Drop half of the blurry sauce on the cream cheese filling and draw a pattern with a fork. Bake in the middle of the oven for about 30 minutes. Turn the oven off and allow the cake to rest for about 30 minutes in the oven. Allow to cool completely in the refrigerator and serve with the rest of the blueberry sauce and fresh blueberries.
