The Tomato and Arugula Pesto Grilled Cheese is a tasty sandwich for lunch or dinner time. The homemade pesto paired with Arla® Havarti sliced cheese is a major upgrade for your grilled cheese.

Pesto Ingredients

  • 1 cup packed arugula leaves, stems removed
  • ¼ cup walnuts halves
  • 2 cloves peeled garlic
  • ¼ teaspoon kosher salt
  • ¼ cup freshly grated Parmesan cheese
  • ¼ cup olive oil

Sandwich Ingredients

  • 2 slices country bread
  • 1½ tablespoon softened unsalted butter
  • 1 tablespoon arugula
  • 2 thick slices of fresh tomatoes
  • 1 slice Arla® Havarti Cheese

1. To make the pesto: In a food processor fitted with a blade attachment, combine the arugula, walnuts, garlic and Parmesan cheese. Pulse twice to combine. Pulse a few more times while pouring the olive oil down the feed tube. This makes about half a cup of pesto. Whatever is not used for the sandwich can be stored in the refrigerator for future use. 2. Place the two slices of bread side-by-side and spread the top of one with ½ tablespoon of butter. On the second slice, spread arugula pesto and top it with two tomato slices and 1 slice of Arla® Havarti sliced cheese. Close sandwich with the buttered bread slice, butter side up. 3. Add the remaining butter in a nonstick skillet and place over medium heat. As it melts, swirl butter so it coats the bottom of the pan. Place sandwich in skillet, with non-buttered bread side down and cook until the bread is toasted and golden brown, about 4 to 5 minutes. Flip the sandwich and cook the buttered side for an additional 3 to 4 minutes, or until golden brown. Remove from the skillet, slice and serve.
