Queso Fundido with Chorizo and Roasted Poblano Peppers

  • 4 flour or corn tortillas
  • 1 teaspoon canola oil
  • 4 ounces chopped spicy sausage or chorizos with casing removed
  • 1 medium poblano seeded chili cut into small dice
  • 1/4 cup thinly sliced onion
  • 2 cups grated Arla Dofino® Havarti with Jalapeño Chunk
  • 1/4 cup chopped cilantro

Instructions

1. Preheat the oven to 375ºF. Wrap tortilla in foil and set aside. 2. Heat the oil in a skillet and add chorizo, cook until fat is rendered out, about 1 minute. Add the poblano pepper and cook until it browns, about 2 minutes. Add onion and continue to cook for 3 minutes. Transfer to a paper towel to drain. 3. Layer cheese and chorizo mixture into a baking dish. Place cheese and tortilla package in the oven and bake until cheese melts, about 10 minutes. Sprinkle cheese with cilantro and serve immediately with warm tortillas.
