Mini Mac and Cheese

Turn the ultimate comfort food into mini appetizers. A hit with grown ups and kids alike!

  • 8 ounces elbow macaroni
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 3/4 cup milk
  • 2 cups grated Arla® Dofino® Creamy Havarti Chunk
  • 1 cup finely chopped smoked ham
  • 1/2 cup thinly sliced scallions
  • salt
  • pepper
  • 5 tablespoons panko or plain breadcrumbs
  • vegetable cooking spray

Instructions

Preheat the oven to 425ºF. Bring a pot of lightly salted water to a boil and cook the macaroni until al dente, about 5 minutes. Drain. Spray 3-4 mini muffin trays with non-stick spray. Coat the cups with grated Parmesan, shaking our any excess and set aside. In a medium pot, melt the butter. Stir in the flour and mix well. Slowly add milk, whisking into a thick sauce. Add the Arla® Dofino® Havarti, stirring until blended. Add the cooked macaroni, ham and scallions and mix well. season with salt and pepper. Drop heaping spoonfuls of the macaroni mixture into the muffin cups. Sprinkle tops with panko breadcrumbs and bake for 10 minutes. Loosen the Mini Mac & Cheese with a spoon. Cool in the pan for 5 minutes before removing. Serve warm.
