Classic Tortilla Soup

Tortilla soup is a perfect blend of brothy Mexican flavors and chunky condiments. There is a bite of chicken in every spoonful of soup, making it a meal in itself. Don't skimp on the seasoning.

  • 2 cups shredded cooked chicken
  • 1 cup grated Arla Dofino® Havarti with Jalapeño Chunk
  • 1 diced avocado
  • 6 corn tortillas cut into 1/2 inch strips
  • olive oil spray
  • 8 cloves finely chopped garlic
  • 2 cups chopped onion
  • 1 1/2 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon cayenne pepper
  • 1 can (28-ounce) chopped tomatoes
  • 1 cup chicken broth

Instructions

Preheat the oven to 350°F. Spritz the tortillas with olive oil spray. Arrange on a baking sheet and bake until crisp, about 12 to 15 minutes. Set aside. In a saucepan, heat olive oil and sauté garlic until lightly golden. Add the onion, cumin, coriander and cayenne. Stir and cook for 2 minutes. Add tomatoes, chicken broth, 1/3 of the tortilla crisps and salt. Simmer for 15 minutes. In small batches, puree the soup and return it to the saucepan. Return to a boil and serve while hot with condiments and a squeeze of fresh lime.
