Add some pizazz to the classic Caesar salad by topping the chicken with Arla® Dofino® Dill Havarti crust

  • 2 small boneless chicken breasts
  • salt
  • pepper
  • 1/2 cup grated Arla® Dofino® Dill Havarti Chunk
  • 1/4 cup panko breadcrumbs
  • 1 tablespoon melted butter
  • 1 tablespoon chopped Italian parsley
  • 1/2 teaspoon lemons zest
  • 1/4 cup olive oil
  • 1/3 cup lemons juice
  • 2 tablespoons grated Parmesan cheese
  • 1 clove thinly sliced garlic
  • 2 heads romaine hearts, cut into four spears each
  • 2 ounces Arla® Dofino® Dill Havarti Chunk

Instructions

Preheat the oven to 375°F. Season the chicken breasts with salt and pepper. Combine the cheese with breadcrumbs, melted butter, parsley and lemon zest. Pat the cheese topping on top of chicken. Bake until crust turns a golden color and breasts are cooked thoroughly, about 20 minutes. Remove and set aside. In the meantime, prepare the salad. Whisk together olive oil, lemon juice, cheese and garlic. Toss with lettuce and season with salt and pepper to taste. Divide the salad between serving plates. Slice the chicken and arrange a breast on top of the salad. Shave the Arla® Dofino® Havarti into thin ribbons and place over salad. Serve immediately.
