Fajitas are the perfect family dinner - easy to make and lots of fun to eat. Arla® Dofino® Gouda tops them off right!

Recipe for 5 servings portions

  • 1 cup cilantro leaves
  • 2 cloves thinly sliced garlic
  • 1/2 of a jalapeño (seeded and chopped)
  • 3 tablespoons fresh lime juice
  • 2 tablespoons olive oil
  • salt to taste
  • pepper to taste
  • 1 1/2 pound boneless, skinless chicken breasts cut into 1.5 inch strips
  • 1 large peeled and thinly sliced onion
  • 1 seeded and sliced bell pepper
  • 10 warmed flour tortillas
  • 1 cup grated Arla® Dofino® Gouda Wedge
  • 1 cup guacamole
  • 1 cup salsa

Instructions

In a processor, blend the cilantro, garlic and jalapeño. Add lime juice and olive oil, process until smooth. Season mixture with salt and pepper to taste. Toss the chicken with marinade and place in a glass dish; refrigerate for 30 minutes. Prepare the grill to a high heat. Grill the chicken on both sides until cooked completely, about 7 minutes per side. At the same time, grill onions and peppers until charred and softened. Arrange on a serving platter or serve directly from the grill. Fill tortillas with a combination of chicken, onions and peppers. Top with Arla® Dofino® Gouda, guacamole, salsa and sour cream.
