Havarti's creamy texture and nutty flavor come alive when this pizza is topped with arugula salad tossed in fresh lemon vinaigrette.

  • 2 medium sweet, peeled onion
  • 1/4 cup vegetable oil
  • 1 sprig fresh rosemary
  • cornmeal for dusting
  • 1/2 pound prepared pizza dough
  • 1 1/2 shredded Arla® Dofino® Creamy Havarti Chunk
  • 1/4 cup grated Parmesan cheese
  • 4 slices pancetta or prosciutto
  • 3 cups baby arugula
  • 1 tablespoon fresh lemons juice
  • 2 tablespoons olive oil
  • of lemons

Instructions

Preheat the oven to 425ºF. If you are using a pizza stone, place it in the oven before preheating. Make the caramelized onions: Cut the onions into thin slices. Cook them in the oil with the rosemary over medium heat, stirring occasionally until they soften and turn a golden brown, about 15 minutes. Set aside. Make the Pizza: Dust some cornmeal on a pizza peel or on a baking pan. Divide the pizza dough into two pieces and shape them into balls. Place the balls on the dusted surface. With the aid of a rolling pin, roll and pull the dough into thin 8-inch circles. If the dough shrinks and pulls back while shaping the crust, let it relax for a minute or two, then return to shaping the dough. Remove the rosemary sprig and sprinkle half the caramelized onions, Arla® Dofino® Creamy Havarti and Parmesan cheeses on each circle. Transfer pizzas to the oven and bake until the crusts are crisp and golden, about 15 minutes. Prepare the Salad: While the pizzas are baking, toss the arugula with the olive oil, lemon and a pinch of salt. Finish the pizza: Remove the pizzas from the oven and transfer them to serving plates. Lay two slices of prosciutto on each pizza. Top with arugula and lemon zest. Enjoy hot or at room temperature.
